With the holidays right around the corner, I wanted to share a quick, easy and super tasty dessert recipe with you; that is guaranteed to be a hit at either your office party or family get-together!
Consisting of only five ingredients (yes, you read that right), this no bake, no hassle recipe will be your future go-to for all potluck events.
Here's what you'll need...
- 3 cups of light whipped topping
- 2 cups of mandarin oranges (drained)
- 1 cup of crushed pineapple (drained)
- 1 pkg of orange Jell-O powder

I'm quite fond of this recipe as my mom has been making it for years (in various different flavours). I recently became a brand ambassador for Gay Lea, so I knew this recipe was exactly what I wanted to make for my first sponsored post! But if you aren't a fan of mandarin oranges and/or pineapples, feel free to switch it up with raspberries, cherries, peaches or even mangos - the possibilities are endless!
1. Add the whipped topping and smooth cottage cheese to a mixing bowl.
Now I know what you're thinking... You associate cottage cheese with the chunky and lumpy traditional cottage cheese we've all grown up with. But Gay Lea has introduced their Nordica Smooth Cottage Cheese that has all the nutritional benefits of regular cottage cheese without the lumpy texture. Produced in convenient snack sized cups in delightful flavours like Vanilla Bean, Salted Caramel and Lemon; makes it easy to eat alone, with your choice in toppings or even include in a recipe.
Each 100g serving has 10g of protein and only 110 calories (25% more protein than Greek yogurt and a great source of calcium). While preparing this blog post was the first time I had ever tried the Smooth Cottage Cheese. I'll admit I was somewhat skeptical and even hesitant to try it. But truth be told, I like it better than regular yogurt (and I eat A LOT of yogurt)! It's so creamy and delicious! I can't wait to try the rest of the flavours! Nom nom nom...
Back to the recipe...
2. Add the Jell-O powder, mandarin oranges and crushed pineapple to the mixing bowl and mix all ingredients together.
The result is delicious! Serve family style out of the mixing bowl or spoon into dishes for individual servings.
You can garnish with a sprinkle of Jell-O powder and a single slice of mandarin orange.
This dessert can be refrigerated for later or enjoyed immediately!
